adh673 - Here is a photo of an induction cooktop in a non-contemporary/non-modern kitchen. The induction is 36" over a 30" oven so our cabinet maker made the necessary adjustments to the top drawers on either side. Yes, a 48" gas range would look great in an old historical home but I think there are ways you can still have that old charm look, even with induction. Our house is very old, 1790s, so obviously I wasn't aiming for a period accurate remodel. I went through the same decision - gas or induction. I made a list of pros and cons of each and induction easily won out. I've been using the induction for 9 months and there is no doubt that induction was the right choice for me. Kiwi, mine is at the end of a run with pullout to the left and island across. I like this setup and would not have done it differently. It functions very well and the 8" bump out from counter edge to fridge is not obtrusive.

As a contractor who uses IKEA kitchen a lot, I run into this issue frequently; i.e., if the ceiling is exactly 96", the 40" cabinet is a little too high for a decent crown moulding and the 30" cabinet a little too low. If you are tall, as you say, I would definitely go with the 30" height, and hang them at a higher-than-'normal' height (i.e., with the base at 56" or higher off the floor). By the way, the crown does not have to be so large that it extends all the way down to the top of the cabinets - just use whatever crown size you like (and a 5 1/4" - 5 1/2" crown is the 'correct' size for an 8' ceiling) and use a vertical filler between the top of the cabinet and the crown (for this I use pieces of whatever is the matching IKEA cover panel material). Like in these IKEA projects of mine (with various ceiling heights - the first pic is a 96" ceiling though, with 30" uppers and a fairly large crown above):
