I think your layout needs to be addressed first. None of the seating is facing the TV. This guide shows the optimum placement for your TV size. Have you tried a layout with the TV on the wall where you currently have the starburst mirror?

Houzz about galleys: Here's a more unfitted European approach, with a freestanding island with prep sink, and the main sink and range all on one wall. This example might be taking creative liberty with my theme because the refrigerator is on the opposite wall. But it still feels and functions like a galley.

I totally get living off the grid but honestly you need water IMO no matter what. As for the actual design a long time ago friends built a thermal envelope house it had a gree house facing south with no windows on the N side and the spac below the greenhouse was filled with gravel the system basically allowed the gave to heat during the day and release the heat into the house during the night. I think the design came out of Mother Earth News and it was called a double envelope house. They lived in BC and the cost for heating in the winter was ridiclously low with only a wood stove to heat quite a large house.

2 sinks on island for prep - work between them without dropping food or water on the floor. Stainless steel hood supports cantilevered structure with LED panel. Doors and drawers - tap or push on the surface to open - knee or thigh to open.

Because of the long run of large windows in this kitchen, we had the opportunity to design with primarily base cabinets making the space feel very open and airy and maximized the amount of natural light coming in. In order to break up the long run of cabinetry, we intentionally designed a darker finish around the Galley Workstation.

The open plan kitchen mixes simple wood-grained IKEA cabinets with a classic 1952 vintage O'Keefe & Merritt double oven, offset by a custom installation of vintage hand-painted Spanish tiles as a backsplash, set into classic subway tile.

A corridor view to the North, a western rear exposure, and a need for privacy from neighboring houses, inspires in a "Y"-shaped concept that focuses primarily toward the side rather than the rear of the property. Carefully placed glazing... flow to the exterior rooms of the rear. Existing trees, thick masonry walls, and deep roof overhangs buffer the sun.
