Beautiful! OK to Ogee edge Typhoon Bordeaux?

My fabricator doesn't seem to want to ogee edge typhoon bordeaux. Says it's more expensive, and will chip. Is this true, or maybe they just don't have the expertise or proper equipment?

    That is not true. We do an ogee on Typhoon Bordeaux Granite all the time. It's a very stable stone. Not sure why they would say that.

    Is this picture called Ogee? I have my contractor bringing me samples of granite and none of them seem to look like this
