This almost looks like hardwood flooring applied to the ceiling without a wax finish.
This wider board looks like doug fir. We might want to look into reclaimed lumber?? I'm not sure what the cost price point is there...
Maybe do drywall everywhere except flat ceiling at kitchen? Smaller wood square footage = less money
